Ventilated Wood Oven

The ALFONSO wood-burning ovens of the LUXOR range are VENTILATED and represent the innovation of all indirect fire wood-burning ovens. Its main features are: ventilation system in a low cooking chamber, sized and proportioned like the classic brick ovens of the past, or with the same characteristics as the sand bed; we have renewed it by adding blends of fine pigments of limestone and volcanic rocks that capture the heat and release it gradually to ensure cooking homogeneity in order to obtain a high quality of your delicacies that you will cook. But what characterizes these wood-burning ovens is the ventilation system in a cooking chamber totally lined with refractory bricks made with the best blends of clays and volcanic sand that we only have in Sicily.

This ventilation system has its own particular feature which makes it unique because it is BI-VENTILATED: in fact, it has a fan that cools the motor and one that releases heat into the cooking chamber; it is also mounted outside the oven to guarantee reliability over time, so that it does not absorb the heat of the oven. The fan (which can be activated or deactivated thanks to the appropriate switch) creates turbulence in order to move the heat in the cooking chamber, making it uniform. Usually, cooking in a convection oven creates a light crust on the surface of the food and leaves the inside more fragrant. Suitable for cooking all foods, it is ideal for focaccia, baked pasta, roasts, meat, fish en papillote and vegetables, but also biscuits, tarts and all kinds of sweets with a soft heart, etc. It is also possible to cook more dishes at the same time, also allowing a considerable saving of wood! Next to the switch for the fan there is also the one for the lighting in the cooking chamber, a feature that belongs only to these ventilated models. Well insulated with high density rock wool, finished in stainless steel, equipped with glass-ceramic in the combustion chamber door which lets you see the fire; the same door is hermetically sealed, equipped with a thermal cord: this wood-burning oven could therefore also be used indoors. The door is equipped with an air inlet valve. The oven is entirely in a single body all welded, even the legs, and covered with panels that keep the insulation. The thickness of the steel used is essential for us, which is why the material used was chosen with the utmost care to guarantee the wood-burning oven stability, durability and long-term quality.
